YOU WILL NEED
1 1/2 cups all-purpose flour
1/3 cup sugar
Pinch of salt
10 tbsp unsalted butter (room temp)
6 tbsp Marion Berry preserves (but you can use any flavor your little heart desires)
LET’S DO THIS!
1 Preheat oven to 375°F. Line an 8 x 8 inch baking dish with aluminum foil, leaving an overhang.
2 Whisk the flour, sugar and salt in a bowl. Work in the butter with your fingers to make a crumbly dough. Separate 2 tbsp of the dough and refrigerate for topping.
3 Press the remaining dough into the baking dish and freeze until firm, about 10 mins.
4 Remove from freezer and bake for 15 mins. Then, take out and spread the preserves in a 1/4 - 1/2 inch thick layer on top, leaving a 1/2-inch border. (Be sure not to spread the jam to the edges or else they will caramelize and harden when baked).
5 Crumble the reserved dough on top. Return to the oven and bake for another 20 - 25 mins, until the edges are golden brown. Let cool 20 minutes, then lift out of the pan and cut as desired.
